The baking time will vary a little depending on how ripe the pears are. If the pears you're using are very green or unripe, allow for a little extra cooking time. This recipe makes 2 servings, so save half for Day 5.
1⁄2 cup 2:90 granola
2 teaspoons brown sugar
2 teaspoons sugar substitute
2 teaspoons minced fresh ginger
1⁄2 teaspoon ground cinnamon
4 tablespoons light margarine, melted
2 teaspoons vanilla extract
2 large sliced fresh ripe pears
Nonstick cooking spray
Preheat the oven to 375°F. In a medium bowl, stir together the granola, brown sugar, sugar substitute, ginger, cinnamon, margarine, and vanilla until the mixture is moist and crumbly. Add the sliced pear, tossing to coat.
Spray a small round (5 inches in diameter) baking dish with nonstick cooking spray and spoon the mixture into the dish. Cover with foil and bake for 30 minutes. Uncover and bake another 15 minutes or until browned and bubbly.
